Our meals are well balanced and free from any animal foods (e.g. fish, meat, egg and dairy food).
We never use any chemical seasoning, katsuo-dashi (stock made from dried bonito flakes) and sugar. We use organic soy source, vinegar, and mirin instead. They are made from organic and not genetically-modified materials, natural sea salt and natural water.
For salt, the most essential sesoning, we use natural sea salt, which is rich in minerals.
It seems like a stoic food style, but in fact, it is a comfort food, and gives safety and warmth.
